Chicken scarpariello
Ingredients
- Chicken breast
- Flour, some
- Oil, some
- Garlic cloves, 8
- Rosemary
- Chicken stock, 2 cups
- Lemon juice, 2 tbsps
- Butter, some
- Peppadew or pickled peppers
- Salt and pepper
Method:
- Place the chicken breast in the flour, salt and pepper
- Cook the chicken on both sides
- Add the rosemary and garlic and continue to cook
- Remove the breast and continue to cook the spices
- Add the stock, butter and lemon juice
- Cook the red pepper with the stock and lemon juice
- Mix the chicken breast with the rest of the ingredients
